Roasted Cauliflower

  • 1 pound cauliflower, chopped
  • 1 teaspoon cilantro, minced
  • ¼ cup olive oil
  • ½ teaspoon salt

  1. Preheat oven or toaster oven to 400˚F.
  2. Cut the cauliflower into 1- to 2-inch chunks.
  3. Place cauliflower in a large bowl with olive oil and stir until coated with oil.
  4. Sprinkle salt and cilantro over cauliflower.
  5. Transfer cauliflower to a baking dish in a single layer to ensure they roast instead of steam.
  6. Bake for 25-35 minute, stirring every 10 minutes to distribute herbs and oil.
  7. The cauliflower is done when edges are browned.

Serves 3 - 1 cup per serving.
