- Heat oil in a large skillet over medium-high heat.
- Sauté onion until tender, about 3 minutes.
- Add remaining ingredients and cook, stirring frequently, until okra is slightly tender, but not mushy, about 5 minutes.
- Serve 1 cup of sautéed okra over ½ cup of brown rice.
