Fruit and Veggie Cups
Recipe Ingredients
1 cup fresh mango, peeled and sliced into spears
1 cup fresh watermelon, sliced into spears
1 cup fresh pineapple or canned pineapple in 100% juice, sliced into spears
1 cup fresh papaya, peeled and sliced into spears
1 cup jicama, peeled and sliced into spears
1 cup cucumber, peeled and sliced into spears
Juice from 1 lime
1 teaspoon chili powder
Recipe Preparation
Slice all fruits and vegetables into spears.
Arrange spears. Mix together all the fruit in a medium bowl and sprinkle with lime juice and chili powder.
Serve immediately.
Makes 4 servings - 1¼ cups per serving.
