Fruit and Veggie Cups

  • 1 cup fresh mango, peeled and sliced into spears
  • 1 cup fresh watermelon, sliced into spears
  • 1 cup fresh pineapple or canned pineapple in 100% juice, sliced into spears
  • 1 cup fresh papaya, peeled and sliced into spears
  • 1 cup jicama, peeled and sliced into spears
  • 1 cup cucumber, peeled and sliced into spears
  • Juice from 1 lime
  • 1 teaspoon chili powder

  1. Slice all fruits and vegetables into spears.
  2. Arrange spears. Mix together all the fruit in a medium bowl and sprinkle with lime juice and chili powder.
  3. Serve immediately.

Makes 4 servings - 1¼ cups per serving.
